What You’ll Need
4 large organic eggs
2 English muffins (try rudis organic multigrain ones, yum)
2 Tbls organic butter
1 Slice of bacon (optional) or Canadian bacon
1 Med chopped Roma tomato
1/2 cup shredded cheddar cheese
1 green onion chopped
Salt & Pepper to taste
Instructions:
In a bowl beat eggs until mixed together. Set skillet over medium heat and allow pan to get hot. Once it has heated up pour in egg. Be sure to stir frequently, until eggs are set (3-5 mins). Remove heat and sprinkle on salt and pepper.
While the egg is cooking have the English muffins toasting this way they are warm ready for butter while the eggs are still hot. add topping in this order: tomato (if you’re using one), scrambled eggs, bacon or ham then shredded cheese. Place on a baking sheet
Preheat broiler. Let the pizzas broiler for about 3-4 minutes or until cheese is melted. Sprinkle on green onions when pizzas come out of the oven!
