Baked Panko Chicken With Sweet Yam Purá

Inspired by Fried Chicken and Mashed Potatoes, yet a tad healthier
Baked not Fried / Yam not Potato
What You’ll Need:
For the Chicken –
8 chicken thighs (with or without bone)
2 eggs
1/2 C milk
Panko Piled on a plates (about 1 -2 cups depending if you’ll double dip)
salt pepper and fresh parsley(garnish)
For Sweet Yam Purá –
3 large yam
1/3 stick organic butter
1/2 C milk
Instructions:
Preheat over 475F cook time 45 -60 mins Set up the chicken station – in a bowl mix eggs and milk salt and pepper set bowl to the left of you, next stop panko on a plate, then the place on baking sheet (for easy clean-up I like to place a rack on top of a baking sheet covered in foil). Looking for extra crispy, repeat step 1 & 2 @ the chicken station! Set a time for 20 mins when rings flip chicken, then face up again to let the top crisp…. before serving add parsley….yummmm
Place whole peeled yams in a large pot and cover with water. The size of your yams with determine cook time, max 60 minutes. Check with a folk and once done drain water add milk and butter, pinch of salt and mash all together.
Serves 4 +
